The Aged Gouda and Porcini mushroom salami is made by winemaker Pete Seghesio at Journeyman in Healdsburg, California using Kurobuta pork raised by Snake River Farms in Idaho. Kurobuta is a heritage breed of pig that is world-renowned for its hefty fat content and exceptional tenderness.

Sea salt production in the coastal town of Maldon, England dates back to the time of Roman Britain. The Maldon Salt Company was founded under its current name in 1882. The pyramid-shaped sea salt flakes are hand-harvested.
