Tasting Notes and Suggested Wine Pairing
Cran-raspberry and pomgranate with black tea and fresh fennel
In the summer I love it with a slight chill on it paired with grilled salmon and a super mustardy lentil salad with herbs in the backyard.

SALUMERIA: A blend of 48% Stillwater Creek Cabernet Sauvignon clone 191 with 44% Boushey Sangiovese and 8% Stillwater Creek Merlot. Individually hand-picked, destemmed and fermented separately in open top bins with gentle punchdowns. Delicately pressed, the blend was aged in experienced French oak barrels for 10 months and bottled without fining or filtration in American-made glass under TCA free corks. “Salumeria” is the Italian word for deli - the shop where you’d buy salami and prosciutto.
Tasting Notes and Wine Pairing Suggestions
Italian-inspired, tart red cherry and juicy plum, leathery with rustic tannins.
The inspo for this was Finocchiona salami, but it’s delicious with whatever you like on your charcuterie board. It also works great with old school pasta with red sauce, lasagna, grilled Italian sausage or a La Scala style chopped salad.
