Paige, my coworker at Baer shared her “Spring Box” from Hama Hama Oyster Company with me - so nice. The delivery of live shellfish is kind of a 911 emergency - you got plans? well cancel ‘em we got shellfish to eat now. Included in the box were Eagle Creek oysters, butter clams and (drum roll) Hood Canal Spot Prawns. Spotties are more delicious than both lobster and Dungeness crab I said what I said. And they are a particularly nice pairing with my Chenin blanc.

Spot Prawns are wild caught, ultra seasonal and extremely delicious. Their antennae are super cute, banded red. OK technically they are shrimp. I am trying to learn about why the season is so short and why they can’t be farmed or frozen successfully. I’ve only bought them live or the day after harvest, head off.
